| Disease | PROLONGED HEATING OF STEVIOSIDE SOLUTION(6.5 MG/ML) AT 100 C RESULTED IN A DECREASE IN STEVIOSIDE CONCENTRATION WITH THE APPEARENCE OF GLUCOSE AND STEVIOLBIOSIDE. THE FORMER APPEARED AFTER 8 HOURS AND THE LATTER AFTER 4 HOURS. HEATING STEVIOSIDE IN WATER AT 60 C DID NOT CAUSE APPRECIABLE DEGRADATION OF STEVIOSIDE WHEN DISSOLVED IN CITRIC ACID OR PHOSPHORIC ACID. HEATING IN THE ACID SOLUTIONS AT 100 C PRODUCED MARKED DEGRADATION, PRODUCING STEVIOLBIOSIDE,GLUCOSE AND PROBABLY ISOSTEVIOL. STEVIOL DID NOT APPEAR TO BE A DEGRATATION PRODUCT. WHEN FORMULATED IN CARBONATED BEVERAGES,0.1% STEVIOSIDE EXHIBITED NO SIGNIFICANT DECOMPOSITION AT 4 C OR AT ROOM TEMPERATURE FOR AT LEAST FIVE MONTHS,WITH EITHER PHOSPHORIC OR CITRIC ACID AS THE ACIDULANT. WHEN EACH OF THESE SOLUTIONS WAS STORED AT 37 C A 36% LOSS OF STEVIOSIDE WAS OBSERVED AFTER FOUR MONTHS WITH THE PHOSPHORIC ACID ACIDULANT. DEGRADATION IN CITRIC ACID AT 37 C WAS SLOWER, WITH A 17% LOSS AFTER 4 MONTHS STORAGE. THE ONLY DEGRADATION PRODUCTS THAT COULD BE DETECTED WERE STEVIOLBIOSIDE GLUCOSE AND AN UNKNOWN COMPONENT. WHEN STORED AT 60 C FOR 137 HOURS IN CARBONATED BEVERAGE FORM,LITTLE OR NO REDUCTION IN STEVIOSIDE COULD BE OBSERVED. NO SIGNIFICANT CHANGES IN STEVIOSIDE CONCENTRATION WERE OBSERVED IN EITHER THE PHOSPHORIC ACID OR CITRIC ACID FORMULATIONS WHEN EXPOSED TO 3000 LANGLEYS OF SUNLIGHT. |
