| Disease | WHEN HEATED FOR FOUR HOURS AT 100 C IN NEUTRAL SOLUTION,THE TITLE COMPOUND YIELDED REBAUDIOSIDE B AND GLUCOSE. WHEN HEATED IN EITHER THE CITRIC ACID OR PHOSPHORIC ACID DILUENT AT 60 C FOR UP TO 137 HRS, NO APPRECIABLE DEGRADATION OF THE TITLE COMPOUND WAS OBSERVED. WHEN HEATED AT 100 C THE TITLE COMPOUND IN CITRIC ACID SOLUTION PRODUCED REBAUDIOSIDE B,GLUCOSE AND AN UNIDENTIFIED COMPOUND AFTER FOUR HOURS. SIMILAR RESULTS WERE OBTAINED WITH THE PHOSPHORIC ACID SYSTEM. REBAUDIOSIDE A SHOWED NO SIGNIFICANT CHANGES DURING FOUR MONTHS OF STORAGE AT 4 C,THREE MONTHS AT ROOM TEMPERATURE OR ONE MONTH AT 37 C IN EITHER CITRIC ACID OR PHOSPHORIC ACID SYSTEMS. WHEN STORED AT 60 C FOR 137 HOURS,REBAUDIOSIDE A DEGRADED 3% IN CITRIC ACID AND 6% IN PHOSPHORIC AID ACIDIFIED BEVERAGES. WHEN EXPOSED TO 3000 LANGLEYS OF SUNLIGHT IN PHOSPHORIC ACID ACIDIFED BEVERAGE,22 PER CENT DEGRADATION WAS SEEN AS WELL AS 18% DEGRADATION UNDER THE SAME CONDITIONS IN CITRIC ACID CARBONATED BEVERAGE. |
