| Disease | 11 MEN WERE GIVEN DIETS HIGH IN EITHER PALMITIC, STEARIC OR OLEIC ACID, FOR PERIODS OF 3 WEEKS EACH DIET; DIETS WERE ISOCALORIC. COMPARED TO THE HIGH-PALMITIC DIET, THE STEARIC ACID DIET SHOWED A 14% CHOLESTEROL DECREASE. THE OLEIC DIET SHOWED A 10% DECREASE. TOTAL PLASMA TRIGLYCERIDES AND HDL-CHOLESTEROL WERE NOT DIFFERENT IN THE 3 DIETS. STEARIC ACID APPEARS TO BE QUICKLY CONVERTED TO OLEIC ACID IN THE BODY. |
